Turkey Meatballs with Braised Apples
Ingredients:

1 lb (500 g) lean ground turkey

1 (1 ) garlic clove, minced

3/4 cup (175 mL) soft breadcrumbs

1/4 cup (50 mL) onion, chopped

3 tbsp (45 mL) wlanuts, chopped

1 (1 ) egg, lightly whisked

3 tbsp (45 mL) parsley leaves, chopped

2 tbsp (30 mL) canola oil
-
to taste (to taste ) pepper
-
1/4 cup (50 mL) red pepper, finely chopped
-
1/4 cup (50 mL) onion, finely chopped
-
1 (1 ) large parsnip, finely chopped
-
2 (2 ) firm apples, peeled and thinly sliced

1/2 cup (125 mL) apple juice
Preparation:
In a bowl, combine turkey, garlic, breadcrumbs, onion, walnuts, egg, parsley, and pepper. Shape into 1 inch (2.5 cm) meatballs.
Heat 1 tbsp of canola oil in a saucepan over medium heat and cook meatballs until nicely browned and juices run clear, about 10 minutes. Set aside.
Heat another tbsp of canola oil in a saucepan over medium heat. Sauté red pepper, onions and parsnip for 1 – 2 minutes.
Add apples and continue to cook until apples soften slightly, about 10 minutes. Add apple juice and simmer, uncovered, about 10-15 minutes, to slightly reduce liquid.
Add reserved meatballs to the pan and heat through, about 5 – 10 minutes.
Additional Information:
Fresh apples add flavour and texture to this dish. It’s best to use a firmer apple that will hold its shape such as McIntosh, Golden Delicious and Granny Smith.
