Cajun Pork Pinwheels
Ingredients:

2 (2 ) PORK TENDERLOINS, well trimmed, about 12 oz (375g) each

1 tbsp (15 mL) canola oil

2 (2 ) stalks celery, chopped

1 tsp (5 mL) dried thyme, crushed

1/4 tsp (1 mL) garlic powder
-
1/4-1/2 tsp (1-2 mL) cayenne pepper

1/2 tsp (2 mL) paprika
-
1/2 cup (125 mL) finely chopped red pepper
-
1/2 cup (125 mL) finely chopped onion
-
to taste ( ) lemon pepper
Preparation:
Cut each pork tenderloin lengthwise to but not through bottom. Open and flatten tenderloin. Cover each tenderloin with plastic wrap. Pound lightly, working from the centre out until flat, about 1/4'' (0.5cm) thick.
Heat oil in a skillet over medium heat. Add remaining ingredients, except lemon pepper. Saute, stirring, 5-6 minutes until tender. Cool slightly.
Spread each tenderloin with half of vegetable mixture to within 1'' (2.5 cm) from edges. Roll each tenderloin from the short side, enclosing filling.Tie or secure with toothpicks. Sprinkle each piece lightly with lemon pepper.
Roast at 325ºF/160ºC for 45-50 minutes or until a meat thermometer registers 155-160ºF (68-71ºC). Remove from oven -- tent loosely with foil and let rest 5 minutes. Remove string or toothpicks -- slice and serve.
