Buttermilk Biscuits

Ingredients:

  • 2 cup (500 mL) flour
  • 1 tbsp (15 mL) baking powder
  • 0.5 tsp (2 mL) salt
  • 0.25 tsp (1 mL) baking soda
  • 6 tbsp (90 mL) butter
  • 1 cup (250 mL) buttermilk

Preparation:

Stir together flour, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Add buttermilk all at once -- stir until dough clings together and forms a ball. Knead dough 10 - 12 strokes on lightly floured surface. Pat or roll to form a rectange about 1/2'' (12 mm) thick. Cut into squares with a knife or into rounds with a 2'' (5 cm) biscuit cutter. Place on cookie sheet -- brush tops with additional buttermilk. Bake in preheated 450 F (230 C) oven 15-18 minutes.

Variation: Cheese Biscuits: Place biscuits about 1/4'' (6 mm) apart on cookie sheet. Sprinkle tops of biscuits with 1 cup (250 mL) shredded Cheddar cheese after brushing with buttermilk. Bake as above.
