Balsamic Pepper Chicken

A simple, yet elegant, dish.

Ingredients:

  • 4  (4 ) boneless, skinless chicken breasts
  • 2 tsp (10 mL) lemon pepper
  • 2 tsp (10 mL) vegetable oil
  • 1/4 cup (50 mL) chicken broth
  • 2  (2 ) cloves garlic, minced
  • 1/3 cup (75 mL) balsamic vinegar

Preparation:

Sprinkle lemon pepper on both sides of the chicken breasts. In a skillet, heat oil over medium heat. Add chicken and cook for 7 - 9 minutes on each side or until thermometer inserted into the thickest piece reads 170°F. Remove chicken to a serving platter to keep it warm.

Mix vinegar, broth and garlic and add to the skillet. Stir cook over medium-high heat for about 2 minutes or until the mixture is reduced and slightly thickened. Pour sauce over chicken breasts and serve with rice and green beans.

TIP: Double the sauce ingredients if you want extra sauce for dipping.
