Herb-Grilled Chicken Breasts
Ingredients:

1/4 cup (50 mL) fresh mint, finely chopped

1/4 cup (50 mL) chives, finely chopped

1/4 cup (50 mL) cilantro, finely chopped

3 tbsp (45 mL) fresh ginger, finely chopped

3 (3 ) garlic

1 1/2 tbsp (20 mL) soy sauce

1 tbsp (15 mL) sesame oil
-
1 tbsp (15 mL) canola soil

1 1/2 tbsp (20 mL) dark brown sugar, packed

1/4 tsp (1 mL) cayenne pepper

4 (4 ) boneless, skinless chicken breasts
Preparation:
Combine first 11 ingredients in a food processor or blender. Process until well blended, scraping down side of bowl occasionally.
Put chicken in a large sealable bag. Pour in herb mixture -- seal bag, then turn bag until chicken is completely coated with the herb mixture. Chill for at least 2 hours, turning bag occasionally. (Can be prepared up to 1 day ahead.)
Heat barbecue to medium high heat. Grill chicken about 5 minutes per side or until meat thermometer inserted into the thickest piece reads 170°F.
Slice chicken crosswise into this slices, transfer to plates and serve immediately.
