Mushrooms are good to excellent sources of riboflavin, niacin, copper and selenium. In fact, mushrooms are the only type of produce that is a good source of selenium. Selenium is an essential mineral that works closely with Vitamin E to produce antioxidants. Antioxidants neutralize free radicals which can damage cells and increase the risk of cancer and other diseases of aging.
