Almond Crusted Turkey Steaks
Ingredients:

4 (4 ) Turkey breast steaks

1/2 cup (125 mL) raw almonds, sliced or ground

1/4 cup (50 mL) grated Parmesan cheese

1/4 tsp (1 mL) dried basil

to taste (to taste ) salt

3 tbsp (45 mL) EACH, butter and oil, divided

1/2 cup (125 mL) white wine or apple juice

2 tsp (10 mL) lemon juice
Preparation:
Combine almonds, cheese, basil, paprika and salt on sheet of waxed paper. Dip turkey steaks, one at a time into the mixture, coating both sides.
Heat 1 tbsp (15 mL) each of butter and oil in 10 inch skillet. Add turkey steaks and brown over medium heat, turning once. Cook each steak approximately 10 minutes, or until no longer pink in the center.
Remove turkey to heated serving platter. Add remaining butter and oil to skillet and cook remaining turkey. Once all turkey is cooked, add wine and lemon juice to skillet and boil rapidly until slightly thickened. Spoon sauce over steaks.
