Apple Snowballs.....in Manitoba
Ingredients:

2 cup (500 mL) all purpose flour

1 tbsp (15 mL) baking powder

1/4 tsp (1 mL) salt

1/2 cup (125 mL) CANOLA oil

2/3 cup (150 mL) milk

4 (4 ) small apples, peeled and cored (MacIntosh)
Preparation:
Filling:
2 tbsp (30 ml) cinnamon
1/4 cup (50 ml) brown sugar
1 egg, lightly beaten
1 tbsp (15 ml) water
Maple-Caramel Sauce:
2 cups (500 ml) whipping cream
3/4 cup (175 ml) brown sugar
1/2 cup (125 ml) maple syrup
1 cup (250 ml) vanilla ice cream
Combine flour, baking powder and salt in large bowl. Add canola oil to mixture and stir lightly to form a coarse cornmeal consistency. Add milk slowly and mix only until dough forms a ball. Add more milk if needed. Turn dough onto a lightly floured board. Lightly flour top of dough. Knead dough a few times, just to incorporate all ingredients.
Divide dough into 4 equal pieces. Roll out to 20x20 cm (8x8 inch) squares. Place apples in center of each square and fill centers with cinnamon-sugar mixture. Brush surrounding dough with beaten egg. Bring corners of dough up and around the apple. Pinch together at the top of the apple, making sure to leave a slight opening. Ensure the dough is securely encasing the apple.
Bake in a greased 22x22 cm (9x9 inch) cake pan at 350°F (180°C) for 30 to 40 minutes or until golden brown.
Meanwhile, combine, cream, sugar and syrup in a large saucepan. Stir over medium heat until sugar dissolves. Increase heat and bring to a boil. Then reduce heat again to medium and simmer sauce for about 40 to 50 minutes or until sauce is caramel coloured and mixture is thickened and reduced to 425 ml (1 3/4 cups). Stir occasionally. Cool sauce slightly.
To assemble:
Place snowballs on 4 dessert plates, drizzle with caramel sauce and garnish with ice cream.
